Mini Donuts



It's been years since I last made donuts so when I got this order I had to do a little bit of digging on my old notes. I also had to figure out how to make mini ones since I've never seen any small donut cutters in the market so I rummaged trough my cookie cutters and found a  three-inch 0 (zero) Wilton cookie  cutter. It was perfect for the job! After frying, I topped the donuts with sugar glaze and piped tempered dark chocolate as a design.

Mini Donuts Recipe (makes around 60 mini-donuts)

3/4 c lukewarm water
2 1/2 tsp.yeast
1/4 c milk
3 T sugar
1 1/2 c all purpose flour

Dissolve the yeast in lukewarm water.
Add the milk and sugar. Mix well.
Add the flour and let rise for 10 minutes.

After it has risen for 10 minutes, add the following to the mixture:

3/4 c corn  oil
1 pc. egg
1/4 c plus 2 T sugar
1 1/2 t salt
2 1/2 to 3 c all purpose flour

Mix then knead until smooth.
Allow the dough to rise for 1 hour.
After rising, punch down and shape them using a donut cutter.
Deep fry until light brown.
While still warm, brush with butter and glaze with sugar glaze.
